  • Yukon gold potato pancakes

Ingredients

  • 500 g (1 lb.) grated Yukon Gold potatoes
  • 1 omega-3 egg
  • 30 ml (2 tbsp.) whole wheat flour
  • 5 ml (1 tsp.) cinnamon (optional)
  • 1 ml (1/4 tsp.) salt
  • 50 ml (1/4 cup) canola oil

Serve hot or cold, for breakfast, lunch, or supper.

Preparation

Grate potatoes with peel on. Put in a sieve and press to remove as much water as possible. Set aside.

Beat egg and add flour, cinnamon, and salt. Add grated potatoes and mix well.

Heat a non-stick frying pan on medium. Add canola oil. Split the dough into 12 pancakes and place into hot pan. Flatten slightly.

Cook for approximately 5 minutes on each side, or until pancakes are golden brown. Serve with non-fat sour cream or applesauce. For the lightest and crunchiest pancakes, remove as much water as possible from the grated potatoes.

If you don’t have any Yukon Gold potatoes, use another type.
