Potato, cranberry and nut surprise cookies

Ingredients
- 250 ml (1 cup) butter
- 500 ml (2 cups) brown sugar
- 2 large eggs
- 250 ml (1 cup) mashed potatoes
- 125 ml (1/2 cup) liquid used to cook potatoes
- 750 ml (3 cups) all-purpose flour
- 5 ml (1 tsp.) salt
- 5 ml (1 tsp.) baking powder
- 2.5 ml (1/2 tsp.) nutmeg
- 5 ml (1 tsp.) cinnamon
- 5 ml (1 tsp.) instant coffee
- 250 ml (1 cup) chopped walnuts
- 250 ml (1 cup) dried cranberries
Préparation
Preheat the oven to 205°C (400°F).
Cream butter and sugar together.
Add eggs one at a time and mix well.
Add mashed potatoes and cooking liquid. Mix well.
Sift flour, salt, baking powder, nutmeg, and cinnamon together.
Add instant coffee, walnuts, and cranberries to the dry ingredients.
Add this mixture to butter mixture and mix well.
Chill for at least 1 hour.
Use a teaspoon to measure dough and place on a greased cookie sheet.
Bake for 9 to 10 minutes.
