Potato candies
- Portions : 4 dozen

Ingredients
- 1 medium potato
- 1 to 1½ litres (4 to 6 cups) icing sugar
- 2.5 ml (1/2 tsp.) vanilla
- Peanut butter
Topping choices:
Nuts: walnuts or pecansDried fruit: dried cranberries, apricots, or dates
Chocolate chips
Mint candies (candy canes)
Dark or semi-sweet chocolate
Preparation of traditional recipe
- Bake potato for 40 minutes.
- Let potato cool completely and scoop out the flesh. If you are using a boiled potato, it is important to fry the mashed flesh in order to dry it. The time will depend on the quantity of water in the potato.
- Gradually incorporate icing sugar and vanilla until dough is soft but firm enough to be worked. Flatten dough with a rolling pin to 6 or 7 mm (about 0.3 inches), spread with peanut butter and roll dough into a cylinder. Let cool in the refrigerator and then slice.
Preparation for different toppings
Follow the first three steps above.
Variation 1: Make small balls of dough (10 ml or 2 tsp.), flatten them slightly and place a half nut or a piece of dried fruit on top.
Variation 2: Add chocolate chips, chopped nuts or chopped dried fruit or a mixture of these to the dough. You can also add mints. Mix well, make small balls of dough, then either flatten them or leave them round.
With or without toppings, the candies can be dipped into melted chocolate.
Note: Flavouring can be changed according to your taste: mint, rum, banana, etc.
