Ingredients

  • 175 ml (approx. ¾ cup) butter
  • 500 ml (2 cups) sugar
  • 4 eggs, separated
  • 500 ml (2 cups) all-purpose flour
  • 200 ml powdered cocoa
  • 10 ml (2 tsp.) baking powder
  • 2.5 ml (1/2 tsp.) cinnamon
  • 5 ml (1 tsp.) nutmeg
  • 1 ml (1/4 c. tsp.) salt
  • 250 ml (1 cup) pecans
  • 250 ml (1 cup) mashed potatoes
  • 125 ml (1/2 cup) milk

Preparation

Preheat oven 175oC (350°F).

Grease and flour a 25 cm (10 inch) bundt cake tin.

Cream butter and sugar together. Add egg yolks and mix well.

Sift flour, cocoa, baking powder, cinnamon, nutmeg and salt together. Coat nuts with a bit of flour mixture.

Add mashed potatoes to first mixture. Then add flour mixture, alternating with milk, and when finished add nuts.

Beat egg whites into soft peaks. Gently fold into dough with a spatula.

Bake in oven for approximately 1 hour. Cool cake and ice if desired.
