A diversified market

Potatoes are the fourth largest crop grown in the world, after wheat, corn, and rice. Each year, 322 million metric tonnes are produced.

Canada, the 12th largest potato grower in the world producing 4.28 million metric tonnes, is the second largest international exporter of frozen potato products.

In Quebec, potatoes are the third most important agricultural product. Approximately 80% of the potatoes consumed in Quebec are also grown here. A little more than half of the production ends up on the table, while around 20% is destined for the potato chip market, particularly dynamic in Quebec. The remainder of the production is used for various sub-sectors, including frozen french fries, and seeds.

Over the last few years, the potato market has dropped slightly. This is due to the fact that the potato is often associated with poor eating habits. Luckily, an increasing number of nutritionists are defending its image by reminding us that it is a very healthy, nutritious vegetable when prepared correctly.
